Colorado Springs’ north side gets more steak, seafood dining options | Table Talk

Colorado Springs will soon get two new upscale steak and seafood restaurants in the north side of the city: Prime25 N and Roth’s Sea & Steak. Here’s an update about each establishment.
• Prime25 N, 1895 Democracy Point, a second location for the popular steakhouse on Tejon Street south of downtown, comes to us by Chuck Schafer, owner of Five Times Hospitality Group, and Donnie Cannella, Schafer’s business partner for Prime25 N. The restaurant is in the former Manhattan Room Tapas Kitchen.
“We’re planning to open mid-September, depending on inspections, of course,” Schafer said cautiously at a recent tour of the new eatery.
The major refresh of the Manhattan Room included opening the central room space and adding two private dining spaces on each side of the restaurant.
Schafer said the reconfiguration will allow for an additional 44 seats to offer greater capacity of about 120 seats.
Impressive cascading faux greenery arrangements from hanging lights draw your eyes upward to the high ceiling. Beneath the ivy arrangements, there is a grouping of raised, semi-circle, cushy, deep green upholstered banquettes dominating the center of the dining room. More bench banquettes line the west wall of the room. Tables will be topped with white linens, making for an elegant steakhouse aura. There was new construction required for adding the new dining area west of the main room.
“It gives us additional seating for overflow or to serve as a private space,” Schafer said. “We covered the back wall in wallpaper tiles from floor to ceiling, which is backlit to create a wine wall.”

That wall, which can be glimpsed from the dining room, adds a dramatic, inviting feeling to the new space.
The open kitchen across the back of the room has been minimized. An expo and serving station with overhead warming lights blocks part of the view of the kitchen.
“This is where Pete (Moreno, the executive chef) will be checking the plates before the servers take dishes to tables,” Schafer explained.
Besides world-class steaks and seafood, a couple of new items will be showcased on the menu: a three-tier seafood tower and large sharable (or not, you choose) desserts. A highlight of the bar offerings will be pours available of Weller Millennium luxury bourbon.
“We have bottles at both Prime25 restaurants,” Schafer said. “We are one of two Colorado establishments with it. The Little Nell in Aspen also has it.”

• Roth’s Sea & Steak at the Ford Amphitheater, 95 Spectrum Loop, is scheduled to open this fall with seating throughout the restaurant overlooking the panoramic view of Colorado’s Front Range and the up-close view of the Ford Amphitheater stage. It’s a perfect spot for catching glimpses of a live performance during concert nights while enjoying fine dining.
According to press release information, an impressive culinary crew will be headed up by executive chef Ricky Biswas, who trained under Franck Putelat, winner of both the Meilleur Ouvrier de France and the Bocuse d’Or, at the two-Michelin-starred La Table de Franck Putelat. Biswas also worked at other famed California-based establishments including The French Laundry, Coi and PRESS.
As expected for a seafood and steak restaurant, the menu will include beef from tomahawk steaks and A5 Wagyu tartare to Mediterranean-inspired sea bass and whole roasted turbot.
The general manager will be Jeroen Erens, a Netherlands native, who brings experience in leadership roles at Michelin-starred restaurants and served as export director for Austria’s Domäne Wachau, one of Europe’s premier white wine producers. Most recently, he was food and beverage director at Country Pines Country Club.
In addition to fine dining and outstanding beverage selections, there will be a Chef’s Counter: an intimate, eight-seat experience positioned facing the exhibition kitchen for a seven-course tasting menu paired with rare, world-class wines.
The restaurant will be open year-round, independent of the concert calendar, for dinner service Sundays through Thursdays, with extended hours until midnight on Fridays and Saturdays. • Taste of Peru, 9 a.m.-noon, Sept. 27. Popular chef instructor Luis Pagan will teach the cuisine of his homeland at this interactive demonstration class. The menu includes Peruvian ceviche, creamy, spicy Aji de Gallina and rich no-bake chocolate cheesecake. Cost is $49.
• Oktoberfest Beer Tasting, 2-3 p.m. Oct. 4 for tasting beer with German fare. Cost is $69.
• Beaujolais Wine Tasting, 2-3 p.m. Nov. 22, for a taste of this year’s Beaujolais vintage paired with chef prepared small plates and each person takes home a bottle of this year’s vintage. Cost is $69.
