JP Fizzy's restaurant, bar & soda fountain has replaced the Souper Salad eatery at 808 Garden of the Gods Road in Colorado Springs.

Jason Meinholz, who with his parents and brother Errol opened Soda Pops in northern Wisconsin, brought the soda-themed concept to Colorado Springs. The Wisconsin location is in a historic restored 1800 building.

The Colorado Springs shop is not so much about being a nostalgic building, but what you find inside is certainly a throw-back to days gone by.

It starts with Jason's lifelong pursuit to locate, restore and collect antique pop machines. The pop machine collection inspired Jason, a certified executive chef, to combine his passion for cooking with his love for collecting antique soda machines.

He has brought the unique Soda Pops atmosphere to us with a menu that includes a topping station (more than 70 condiment and salad selections), an assortment of old-fashioned bottled sodas, a full bar (alcoholic, espresso and soda options), burgers, sandwiches, hot dogs, chicken, Wisconsin cheese curds, beer battered onion rings and super-premium Wisconsin ice cream.

Phosphate soda anyone? You can get it at JP Fizzy's. For the uninitiated, phosphate soda is a tangy-sweet beverage made with fruit flavorings, egg and malt that became popular in the 1870s. Details: 598-7610, jpfizzys.com.
