Colorado Springs craft brewing scene too big for bi-weekly, so cheers to GO! | PIkes Pub

GAZETTE FILE: Sometime in 2017, the historic Payne Chapel on south Weber Street will reopen as a taproom for Local Relic Brewing Co. The Gothic-era church was constructed in the late 1890s on land donated by city founder Gen. William Jackson Palmer. Photo taken Tuesday, July 12, 2016 by Mark Reis, The Gazette.

If you’re a Colorado Springs beer nerd, you know about Local Relic, the experimental brewery that pours in the historic Carter Payne Chapel downtown.

But you might not know about the culinary experiment happening in house. Along with the suds — ever had an aloe vera IPA? — Immerse Cuisine has been expanding palates with small bites packing big flavors.

The best time to go? Fridays and Saturdays, when for $20 you get a flight of beer that pairs with a vibrant variety of food.
