Yield: 4 servings
Baker's spray or butter
8 slices rye bread, remove crusts 1 tablespoon prepared mustard 1 cup shredded Swiss cheese 2 (3 oz.) packages chopped corn beef 1 small can sauerkraut, well drained 2 eggs 3/4 cup milk
Press four slices of bread into a sprayed or buttered pie pan. Spread with mustard. Evenly divide cheese, corn beef and sauerkraut on top of bread. Top with remaining slices of bread.
Beat eggs in milk. Pour over pie. Cover and refrigerate overnight. Bake at 325 degrees for 40 minutes.
