Here's a quick salad to fix with flavors that shout summer. To easily cut a dozen cherry tomatoes in half, place a plastic lid from a quart yogurt tub upside down on the counter. Load as many cherry tomatoes as possible to fill the lid. Place another plastic lid that is the same size over the tomatoes. Easy Summer Salad
Yield: 4 servings
12 cherry tomatoes, sliced 4 cups baby arugula 1/2 cup gorgonzola crumbles 1/2 cup Papa Joe's Little Chalet Italian-Style Dressing
In a large bowl, combine the tomatoes and dressing. Allow to marinate about 10 minutes. Add remaining ingredients and toss to combine.
