Yummy chicken curry is a snap to make in the slow cooker and fills the house with a tantalizing aroma.
Slow Cooker Curry
Yield: 4 servings
2 teaspoons minced garlic 1 (1-inch) piece fresh ginger, grated 2 tablespoons red wine vinegar 1 1/2 teaspoons curry powder 1 teaspoon cumin 1 teaspoon salt 1/2 teaspoon fresh ground pepper 1 pound boneless, skinless chicken thighs 1 can diced plum tomatoes
In a small bowl, combine garlic, ginger, vinegar, curry powder, cumin, salt and pepper.
Place chicken thighs in slow cooker. Pour spice mixture over the chicken and toss to coat. Add undrained canned tomatoes. Cook on low for seven hours.
Serve over hot cooked rice.
