Mashed Butternut Squash and Apples

Yield: 6 servings

20 ounces uncooked butternut squash, fresh, peeled and cubed 2 medium Granny Smith apples, peeled, cored and cut into small pieces 1 tablespoon butter, cut up 1/2 teaspoon salt 1/4 teaspoon black pepper, freshly ground, or to taste

Procedure:

Put squash and apples in a shallow microwave-safe baking dish or container; sprinkle butter over top. Cover and microwave until tender, about 10 to 12 minutes. Mash until smooth, yet slightly chunky; stir in salt and pepper.
