Ma-Ma's Deviled Eggs


Yield: 12 halves

6 hard-cooked eggs, peeled and halved, yolks mashed in a bowl 2 tablespoons plus 2 teaspoons mayonnaise 1 tablespoon prepared yellow mustard 2 teaspoons distilled white vinegar 1/4 teaspoon salt, or to taste 1/4 teaspoon black pepper, or to taste Paprika for garnish


Combine thoroughly mashed yolks and mayonnaise, then stir in mustard and vinegar. Stir in salt and pepper, then taste and adjust if necessary. Stir well with spoon to achieve a creamy texture.

Fill egg whites evenly with mixture and garnish each egg half with paprika.
