Roasting garlic is a simple task that makes the garlic much less harsh to the taste. It's great spread on toast or blended with a can of beans for a quick dip. Serve it with carrots and celery sticks for a healthy party snack.

Yield: 2 cups

1 can cannelini beans 1/4 cup reserved liquid from the beans 1 head roasted garlic 1 tablespoon balsamic vinegar


Cut the top off the garlic head, drizzle with olive oil and sprinkle with salt. Wrap in foil and roast at 425 degrees for 45 minutes or until tender and golden brown. Cool.

In a food processor, pur? beans, pulp from the roasted garlic and vinegar. Add liquid a little at a time until the mixture is smooth. Salt and pepper to taste.
