Colorado Springs becoming home to new French-Mediterranean-style eatery

The opening of Couture's Bistro, 218 N. Tejon St., is looking more like a reality since the sign has been positioned on the building's awning. Wahid Hafsaoui and wife Stacy, who own Paris Crepe Caf?next door to the bistro, have formed a partnership with the owner of the 100-year-old building, Carl Peterson. The group hopes to bring us a five-star restaurant. The two restaurants will share a kitchen.

The sign is from Peterson's family owned Couture's Fabric Care, a dry-cleaning business started by Frank Couture in 1904. Peterson's father acquired the business in 1965. During the planning for the new bistro, it was decided to keep the heritage of the original building alive with the original Couture sign. During the cleaning business's heyday, one of the back areas of the building was used to wash room-size Oriental rugs. There's a 30-foot ceiling in that space where rugs were hung to wash and dry. That space has been transformed into an indoor patio area and a bar with a stately street light and French-street scenes painted on the walls. Once the French music gets piped in you'll be hard pressed not to think you are on a French street enjoying an afternoon ap?itif before dining on a world-class meal in the main dining room.

"Stacy is working on the menu, which will feature Mediterranean-styled cuisine, specializing in French and Italian dishes," Wahid Hafsaoui said. "We have hired Ned Robinson as the executive chef. He lived in France when he was 16 and learned to cook from his host mom. Later his love of cooking brought him back to Paris to attend Le Cordon Bleu."

Pending food license approval, the restaurant owners plan to open Nov. 25. Details: 444-0110.

Pop-up shops

Several business owners have opened holiday shops to make shopping easier.

- Coquette's Bistro and Bakery will have its famous gluten-free bakery goods, French-press coffee and take-home meals (such as potpies and lasagna) available at 104 N. Tejon St., 10 a.m. to 7 p.m. Mondays and Wednesdays through Saturdays; and 10 a.m. to 3 p.m. Sundays. Details: 651-3853,

Sweet and tasty

The Pikes Peak Library District and the Old Colorado Historical Society offer the "Tasting History: Colorado City Candy Making" event at the Old Colorado City History Center, 1 S. 24th St., 2 to 4 p.m. Nov. 30.

It's a release party for the "Candy Makers' Manual for the Household," which was originally published in 1905 and is part of the Regional History Series books.
