Cherry Fudge with Dark Chocolate
Yield: 36 servings
3/4 cup butter 1 cup granulated sugar 3/4 cup heavy cream 1 pinch Kosher salt 1 tablespoon cherry-flavored gelatin 2 1/2 cups white chocolate 7-ounce jar marshmallow cream (Fluff) 1 cup dried cherries 10 ounces dark chocolate, melted
In large, microwave-safe bowl, melt butter with sugar, cream and salt on high until mixture boils. Once boiling, add cherry gelatin and continue to microwave on high for 5 minutes. Remove from microwave.
In a mixing bowl, add white chocolate and marshmallow cream. Pour hot mixture over this and beat with a whisk until smooth and creamy and all chocolate is melted. Fold in dried cherries.
Pour mixture in a foil-lined, 9-inch square pan. Pour melted dark chocolate over cherry fudge and refrigerate 4 hours or overnight.
